People with underlying health conditions such as diabetes — and really, all of us — should eat non-starchy vegetables, whether they are fresh, frozen or from a can, because they are full of full of vitamins, minerals and fiber. If you are going to eat these frozen or canned vegetables, look for items low in sodium and fat.
